This is a recipe that was originally Chicken Curry, that I had obtained from mum. I like curries and spicy foods so she gave me this one. I actually messed it up the first time, since I didn’t have tomato puree but it turned out really well regardless. Then the next time I tried it, I added the potatoes and voila this is this recipe.

This is also for since I promised her I’d blog the recipe.

Ingredients:

  • 1 onion chopped
  • 1/2lb - 1lb chicken
  • 1/2 lb potatoes
  • 2 cloves garlic (or more if you like garlic)
  • 1/2 pint chicken stock
  • 1 desert spoon balti curry powder
  • 1 tsp cumin
  • 1/2 tsp cayenne, or more
  • 1 tsp paprika
  • 1 tsp coriander
  • 1 tsp garam masala

Instructions:
Chop the chicken into small mouth-size bits.

Dice the potatoes and fry for 5-10 minutes until golden.

Put the vegetable oil into a frying pan and heat, then add all the spices except the garam masala. Stir and fry up until it starts frothing.

Take the frying pan from the heat, add the onion, garlic and stir in, browning and cooking for 2-3 minutes.

Add the chicken and cook for 2 minutes. Then take frying pan off heat.

Add the liquid (chicken stock), and reduce to a simmer.

Cook for 20 minutes or until the chicken is cooked.

Before eating, you can add ground almonds, or the garam masala, and cook for another minute.
